Crispy Amasi Fried Chicken
Do you love Kentucky Fried Chicken?!
We’ve been enjoying it since I was a little girl and it’s been a staple at so many family picnics over the years. We were so excited to try our own version and were so happy with the results.
Today’s buttermilk Amasi Fried Chicken was simple and beyond delicious! We bought our chicken and cut it up, but you can buy it already cut if you want to skip that step. The breading was our favorite part, and made for an extra crispy fried chicken.
Which pieces are best?
If your family prefers drumsticks, which is all my kids want, skip buying the mixed package and just pick up a package of only drumsticks. Other than personal preference it doesn’t matter. I do suggest frying like pieces together at the same time as the different cuts will fry at different rates.

- 12 chicken pieces
- 2 cups amasi
- 2 tbsp oregano
- 1 tsp Dijon mustard
- 30 ml chicken seasoning
- 20g salt
- 3 cups flour
- 2 tbsp cayenne
- 1 tbsp thyme
- 2 tbsp paprika
- 2 tbsp chilli flakes
- 30 ml BBQ seasoning
- 1l oil
Amasi Fried Chicken Directions :
Combine chicken pieces with Amasi, oregano, mustard, chicken seasoning and add 15g of salt. Mix well and marinate, covered, in the refrigerator for minimum of 3 hrs.( Preferably overnight
Combine the flour with cayenne, thyme, paprika,chilli flakes , BBQ seasoning and the remaining salt.
Drain chicken and discard the marinade.Dredge in the flour and let sit for at least 20 minutes on a wire wreck
Heat oil in a pan over medium heat.Dredge the chicken in the flour again, pan fry the chicken in batches until golden brown on both sides about 15 minutes
Finish chicken in a preheated oven for about 20 – 25 minutes at 170 degrees.
Drain chicken on a paper towel and serve.
