This is a really simple Chinese chicken recipe that packs a flavour punch. Easy to make and smells delicious. It’s marinated in a variety of sauces and spices so the flavour can be absorbed by the chicken, then stir fried in more spices to coat it in even more flavour!

- – Chicken thigh or breast (500g/17oz)
- – Spring onion
- – Ground cumin seeds (2 Tbsp)
- – Chilli powder (1 Tbsp)
- – Sesame seeds (1 Tbsp)
- – Sugar (1 Tbsp)
- – Ginger (diced)
- – Spring onion (lower/white)
- – Light Soy sauce (1 Tbsp)
- – Cooking wine (1 Tbsp)
- – Sesame oil (1 Tbsp)
- – Oyster sauce (1 Tbsp)
- – Salt (1 tsp)
- – Five spice powder (1 tsp)
- – White pepper (1 tsp)

Dice spring onion and separate lower/white and upper/green parts (these will be used separately).
Dice a few slices of ginger into thin strips.
Cut chicken into small 1-2cm pieces.
Mix the chicken in a bowl with the marinade ingredients. Allow to rest for 10-15mins.
Mix Ground cumin seeds (2 Tbsp), Chilli powder (1 Tbsp), Sesame seeds (1 Tbsp), and Sugar (1 Tbsp) in a small bowl.
Heat up a pan with oil and add the marinated chicken. Stir and cook until the chicken is well cooked.
Add the spice mix into the pan and stir together on low/medium heat for a few minutes until the chicken is well coated.
Garnish with upper/green spring onion.
