This is a really simple Chinese chicken recipe that packs a flavour punch. Easy to make and smells delicious. It’s marinated in a variety of sauces and spices so the flavour can be absorbed by the chicken, then stir fried in more spices to coat it in even more flavour!

Ingredients

  • – Chicken thigh or breast (500g/17oz)
  • – Spring onion
  • – Ground cumin seeds (2 Tbsp)
  • – Chilli powder (1 Tbsp)
  • – Sesame seeds (1 Tbsp)
  • – Sugar (1 Tbsp)

Marinade

  • – Ginger (diced)
  • – Spring onion (lower/white)
  • – Light Soy sauce (1 Tbsp)
  • – Cooking wine (1 Tbsp)
  • – Sesame oil (1 Tbsp)
  • – Oyster sauce (1 Tbsp)
  • – Salt (1 tsp)
  • – Five spice powder (1 tsp)
  • – White pepper (1 tsp)

Step 1

Prepare ingredients.

Dice spring onion and separate lower/white and upper/green parts (these will be used separately).

Dice a few slices of ginger into thin strips.

Cut chicken into small 1-2cm pieces.

Step 2

Mix the chicken in a bowl with the marinade ingredients. Allow to rest for 10-15mins.

Mix Ground cumin seeds (2 Tbsp), Chilli powder (1 Tbsp), Sesame seeds (1 Tbsp), and Sugar (1 Tbsp) in a small bowl.

Step 3

Heat up a pan with oil and add the marinated chicken. Stir and cook until the chicken is well cooked.

Step 4

Add the spice mix into the pan and stir together on low/medium heat for a few minutes until the chicken is well coated.

Step 5

Garnish with upper/green spring onion.
