You will need:

  • 240 g cake wheat flour
  • 1 ml salt
  • 3 ml bicarbonate of soda
  • 25 g cocoa powder
  • 5 g instant dried yeast
  • 150 g butter
  • 250 g sugar
  • 2 large eggs
  • 1 ml almond essence
  • 320 ml lukewarm milk

What to do:

Sift together the cake flour, salt, bicarbonate of soda and cocoa powder. Add the yeast and mix with a wooden spoon.

In another bowl, cream the butter and sugar together until light and creamy. Add the almond essence.

Add the eggs, one at a time, beating well after each addition.

Add the dried ingredients alternatively with the milk and beat to a smooth consistency.

Pour the batter into 2 lined and oiled layer cake baking tins.

Leave to rise in a warm place for 30 minutes.

Bake at Preheat the oven to 190°C for 30 – 40 minutes.

Leave to cool slightly and then turn out onto a cooling rack.

Chocolate butter icing

You will need:

125 g butter
500g icing sugar
25 ml cocoa powder
Milk

What to do:

Sift together the icing sugar and the cocoa powder. Soften the butter with a wooden spoon.

Add the icing sugar mixture to the butter and mix till a creamy consistency. Add milk if too dry. Cover with plastic while the cake is baking.
