Hokey Pokey Biscuits
These sweet biscuits are what the Hokey Pokey Biscuits are all about.
- 230g room temperature butter
- 1 cup of sugar
- 2 tablespoons of milk
- 2 tablespoons of golden syrup
- 2 teaspoons of bicarbonate soda
- 1 teaspoon of vanilla
- 3 cups of plain flour
- Optional dark chocolate drops
How To Make Hokey Pokey Biscuits:
Preheat oven to 170°c on bake.
Cream together the butter and sugar.
In a small pot over medium low heat, add
the milk and golden syrup and mix.
Once it is heated through and when it
starts to bubble ( may curdle thats fine )
Add the baking soda and quickly mix until all combined before tipping into butter and sugar.
Mix till combined then do the same with the vanilla and then flour. Should be a soft dough but come together well when pressed. Roll teaspoon amounts into balls and place on lined tray, not too close together.
Press lightly with a fork and if you like add some choc drops to the top 😋 Bake for around 10mins or until golden all over.
Leave to cool on tray for 10mins before transfer to cooling rack.

To check if your bicarbonate of soda is still active, place 1 teaspoon into a cup. Pour over 1/4 teaspoon vinegar. Mixture should bubble up – if it doesn’t, you need to purchase a new packet.
