Lemon Muffin

These easy lemon muffins are oh-so-moist and full of bright, citrusy flavor. They’re perfect for breakfast or any time of day!

Muffins are one of those recipes that everyone seems to love. (Seriously, think about it: do you know anyone who doesn’t love muffins ?!) They’re like a little piece of cake, but not quite as sweet, and they’re perfect for a snack or breakfast on the go. These lemon muffins are my current favorite muffin recipe—they’re light, fluffy, and full of bright citrus flavor.

Ingredients for 12 people:

  • 300 g Flour
  • 250 ml Milk
  • 100 g powdered sugar
  • 75 g Butter
  • 2 Eggs
  • 1 Lemon untreated
  • 1 sachet Yeast
  • 2 tsp. Coffee Poppy seeds
  • 1 pinch Salt

Preparation :

Preheat the oven to 180 °C.

Cut the butter into strips and melt it in a small pan.

Wash the lemon and grate the zest.

Break the eggs into a bowl and mix with the sugar and lemon peel. Whisk until the mixture turns white.

Add the butter and milk and mix again.

Mix together the flour, baking powder and salt and add this mixture to the previous one until you get a smooth dough.

Pour 2/3 of the mixture into buttered muffin cups and sprinkle with poppy seeds.

Place in the oven and cook for about 30 minutes.
