Best Slow Cooked Short Rib Recipe

This luxurious Slow Cooked Short Ribs is a knockout dinner idea! Valentine’s Day dinner, perhaps? Made with red wine, garlic, herbs and mushrooms, it’s super fancy, but also real easy, and you can let the slow cooker do all the work. Get ready for deliciousness
WHAT ARE SHORT RIBS?
Short ribs come from the chuck section of a cow, and are the shortest ribs in the rib cage, which is how they got their name. The meat from these ribs are part of the muscle, so it is tough in nature, but very flavorful. Short ribs need to cook for a long period of time to tenderize, but it’s absolutely worth the wait!
You can use either bone-in or boneless short ribs in this recipe. I’ve tested it both ways and both produce great results.
Ingredients:
- 3 Bone-in Short Ribs
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 tablespoon Canola Oil
- 4 medium Carrots (cut 1 inch)
- 1 cup Beef Broth
- 4 fresh Thyme Springs
- 1 Bay Leaf
- 2 large Onions (1/2 inch wedges)
- 6 garlic Gloves (minced)
- Mushrooms (optional)
- 1 tablespoon Tomato Paste
- 2 cups of red wine or dry Beef Broth
- 1 teaspoons Cornstarch
- 3 teaspoon cold Water
- Salt & Pepper to taste

Slow Cooked Short Rib Directions:
Sprinkle ribs with salt and pepper. In large skillet, heat oil over medium heat. Brown Short Ribs on all sides and transfer to slow cooker. Add carrots, broth, thyme, bay leaf to ribs.
Add onions to the same skillet, cook and stir over medium heat. Add garlic & tomato paste; cook and stir for a minute longer. Stir in wine. Bring yo boil; cook for 8-10 minutes or until liquid is reduced by half. Add to slow cook. Cook, cover on low for 6-8 hours (or until meat is tender)
Remove ribs and vegetables; keep warm. Transfer cooking juices to a small saucepan, skim fat. Discard bay leaf & thyme. Bring juices to boil. In a small bowl, mix cornstarch and water until smooth. Stir into cooking juices. Retune to a boil; cook and stir for 1-2 minutes or until thickened.
Serve over mashed potatoes with gravy, ribs and veggies.
