Vanilla and chocolate chiffon marble cake

One of my favourite cakes to make is the Vanilla and chocolate chiffon marble cake! A very light and airy cake made with minimal fat unlike your traditional cakes.

This is one of my oldest and absolute favourite cake recipes.

Ingredients :

  • 2 1/2 cups of sifted cake flour
  • 1/4 cup of vegetable oil
  • 1 1/2 cups of castor sugar
  • 1 teaspoon of vanilla extract
  • 6 eggs separated (room temperature)
  • 2 1/2 teaspoons of baking powder
  • 1/2 teaspoons of vinegar
  • 3/4 cup of warm water
  • Pinch of salt
  • 2 teaspoons of cocoa

Place your flour, 1 cup of sugar (reserve the 1.2 cup for the egg whites) baking powder and salt and sift into the bowl of your mixer.

In a separate bowl add your egg yolks, water,oil and vanilla. Mix well.

Start your machine on low and slowly add your yolk mixture. Stop and scrap down the bowl making sure no flour is stuck on the bottom. Mix for 2 minutes.

Transfer into a large bowl.Clean your mixing bowl well and add your egg whites with the vinegar, start your machine on medium and very slowly add your sugar. Mix until you have stiff peaks. Now add your egg whites in three separate additions making sure your folding very gently not mixing vigorously.

Now transfer 1/4 of the mixture into another bowl and sift of two teaspoon of cocoa, fold gently until combined. Add your plain mixture into a chiffon/angle cake tin(do not oil or grease) then pour your chocolate batter over the plain batter and with a knife or wooden stick swirl the mixture into a zigzag pattern.

Bake on 160 for 45-50 minutes or until a cake skewer comes out clean. Remember not to open the oven door during the first 40 minutes of the baking time or your cake will sink.

Once cooked I like to turn my tin upside down to cook(this prevents the cake from collapsing)This is completely optional.
Cook completely before gently removing cake from tin. You can use a normal cake tin and line and grease but wont be as fluffy and tall.
