The star ingredient in the veggies croquettes are the potatoes, but we also add carrots and peas. It’s essentially a potato croquette with veggies! Feel free to use any other cooked vegetables you have on hand. For this recipe we fried them, but they are also delicious when baked in the oven!

- 1 kg potatoes
- 200g carrots
- 200g peas (can be frozen)
- 200g green beans (can be frozen)
- 1/4 cup chopped parsley
- 2 eggs
- 100g Parmesan
- 3-4 eggs, beaten
- 2 cups breadcrumbs
Vegetables Potato Croquettes Method:
Boil and peel potatoes
Cut the carrots in small pieces
Mash the potatoes, add 2 eggs, salt, pepper, parmesan
Add carrots, peas, asparagus beans, parsley.
Form balls and press with a flat bottom of cup
Dip in egg, then in breadcrumbs and fry until golden brown
