Lemon Loaf Cake Recipe

- ½ cup of butter, softened
- 1 cup of sugar
- 3 pieces of lemons, reserve the zest
- 1 tsp of vanilla extract
- 3 eggs, at room temperature
- 1½ cups of all-purpose flour
- 2 tsp of baking powder
- ½ tsp of salt
- ½ cup of plain Greek yogurt
- 2 tbsp of lemon juice
- ¼ cup of sugar
- 2 tbsp of lemon juice
- 1 cup of powdered sugar
- 3 tbsp of lemon juice
Lemon Loaf Cake recipe :
In a mixing bowl, add the butter and sugar, then beat them together using a handheld mixer for about 10 minutes or until fluffy and pale, add the vanilla extract, lemon zest, and 1 egg, and continue mixing them together for 1 minute to combine.
Add the rest of the eggs one at a time making sure to beat well in between each addition, then in a separate mixing bowl, sift the flour, baking powder, and salt, and then add half of its portion into the batter mixing them together over low speed.
Add the yogurt and lemon juice, then continue mixing to combine, and then mix in the remaining half of the sifted flour mixture.
Line a 4.4 x 10 inches loaf pan with parchment paper and grease it with butter, then pour the lemon cake batter into the prepared pan and spread it evenly
Put the cake inside the preheated oven, then let it bake at 320°F or 160°C for about 60 minutes or until a toothpick inserted in the center comes out clean. While waiting for the cake to bake, prepare the lemon syrup and lemon frosting.
For the syrup :
Simply add the sugar and lemon juice in a mixing bowl, then gently heat it in the microwave just until the sugar is dissolved. Once the cake is done baking, poke holes all over the cake, then pour the syrup all over the cake and brush it evenly while still hot, and leave it to cool completely.
For the frosting:
add the powdered sugar and lemon juice in a mixing bowl, then mix them together until well combined, unmold and transfer the cooled cake on a wire rack, and pour the frosting all over the top of the cake.
Garnish the cake with some lemon zest, then serve, and enjoy
