Instant Pot Baked Beans : My Grandma’s Secret Revealed

Instant pot Baked beans are a sweet, salty, and smoky dish that makes me feel nostalgic for summer barbecues. When I think baked beans, I think Boston-style. Thicker and less tomatoey than the common English breakfast staple, they were adopted by British colonists from Indigenous Americans of the northeastern woodlands, who cooked beans soaked with bear fat and maple syrup in buried pots, warmed by a rotation of hot rocks.

Baked Beans Ingredients
To make the instant pot baked beans you need:
- Beans (Great Northern / Navy mix) – 1 LB
- Water – 8 cups (+ 1/2 later)
- Maple or smoked Bacon – 8 slices
- Salt Pork – 1 small package ~12 oz.
- 1 Sweet Onion (chopped)
- Minced Garlic – 1 Tablespoon
- Maple Syrup – 1/2 cup
- Molasses – 1/3 cup
- Liquid Smoke – 1 teaspoon
- BBQ Sauce – 1/2 cup
- Ketchup – 1/4 cup
- Worcestershire Sauce – 1 Tablespoon
- Mustard Powder – 1 teaspoon
- Salt – 1 teaspoon
- Brown Sugar – 1/4 cup
Baked Beans INSTRUCTIONS
How to make Instant Pot baked beans?
Add beans & water to instant pot
Cook on high pressure for 25 min
Natural release 10 mins, then quick release the rest
Pour beans into strainer & rinse with cold water. Set IP to Sauté & cook bacon and salt pork until golden brown, flipping often.
Add chopped onion & garlic and sauté for a minute or so
Turn IP off & add syrup, molasses, liquid smoke, ketchup, salt, bbq sauce and Worcestershire sauce & stir well to combine
Add brown sugar, salt and mustard powder, 1/2 cup of water and all beans to the pot and stir to combine
Close IP lid and cook on normal (high pressure) for 15 minutes. Natural release another 15 minutes. Quick release the rest.
Open lid and stir everything around
The only thing I might change is the last cook time. It came out a little more liquid-y than I wanted but it was still great. You can probably get away with cooking on high for 20 mins and maybe even 20 min natural release as well. But I still like how it all came out!
