This colourful and bright beef steak bowls is loaded with tender and juicy strips of beef steak marinated in flavourful and fragrant seasonings, marinated vegetable sides. It’s the perfect weeknight meal that comes together in less than 30 minutes, especially if you prepare and let the beef marinate the night before. Seriously, what are you waiting for?
- 1 lg sweet potato diced into 1 in pieces
- 1 tsp sea salt
- 1 LB flat iron steak diced into 1 in pieces
- 3 TBSP olive oil, divided
- 2 cloves garlic, minced
- 2 bell peppers, seeded + diced into 1″ pieces
- 4 green onions, thinly sliced
- 2 TBSP coconut aminos
- 2 tsp cracked black pepper
- 2 TBSP fresh chopped cilantro
- Chili powder
How to make Steak Bowls :
Place sweet potatoes into a microwave safe bowl then sprinkle with 1 tsp salt. Cover and microwave on high until just barely tender (4-6 mins).
Stir halfway through (ready when can be poked with a fork + having a little bit of resistance) don’t over cook or they’ll be mushy later.
Heat 2 TBSP of olive olive in a large skillet Add the steak in a single layer.
Cook turning every two mins until the pieces are browned (keep centers med, about 8-10 mins)
Remove and set aside. Add the third TBSP of olive oil to the skillet.
Add the sweet potatoes and toss to coat in the fat, cook until browned (3-4 mins)Make a well in the center of the pan then add the garlic until fragrantAdd the bell pepper and scallions, toss with the potatoes
Sautée for 3-5 mins, stirring occasionally.
Add the steak and juices back to the pan along with the coconut aminos
Toss all ingredients and cook an additional 1- 2 mins until the liquid has evaporatedAdd the pepper and cilantro, toss then remove from heat.
Serve your Steak Bowls with fresh cilantro
