Everyone is always looking for the best vanilla cake recipe. Sounds simple right? But harder to find than you think. I’ve made batch after batch and fine tune my recipe until I am finally excited about this one. So stay tuned!

I’m so excited to be sharing my new super soft recipes this year. This week, Vanilla cake recipe.

The goal this year is to make cakes that are from scratch, flavorful and still soft when cold (super soft).

This one had to be void of all corn bread reminiscence (a common pitfall many vanilla recipes have), decidedly vanilla, & needed to be able to stand alone in its greatness. Because everyone loves a good vanilla cake.

Do you have a favourite go to cake recipe? This vanilla sponge cake is probably the one I use most often and usually the one I make for the cakes in my tutorials. ⁠

I love how simple it is to make but it is always light and fluffy and you can make it any flavour. My favourite is substituting the vanilla for orange. This tastes especially nice with milk chocolate ganache!⁠

  • 6 eggs
  • 1 1/2 cups sugar
  • 5ml each; vanilla, orange and caramel
  • 2 cups cakeflour
  • 3 tsp baking powder
  • Pinch of salt
  • 1 cup water
  • 1/2 cup oil

How to make Vanilla Cake Recipe:

Switch oven on 180 degrees C, and prepare 2 standard size round cake tins

Mix the eggs (room temperature), sugar, and 3 essence with an electric mixer for 15 minutes.
In the meantime, put the water and oil in a pot on the stove but do not switch the stove on yet.

Sieve the cakeflour and salt together.
Switch the stove on and bring the water oil mixture to the boil and then low simmer so it is ready when the 15 minutes mixing time is over.

Remove egg mixture from the mixer. Then add half cup of flour and mix in with half cup of water/oil mixture with a whisk. Repeat by adding flour and water/oil ulternatively until everything is in.

Now add 3 tsp of baking powder and mix evening well with the whisk.

Scoop into the pans and bake 25-30 minutes.
It is moist and most delicious.

For a chocolate cake follow the same steps but use a full cup of oil, 1/4 cup cocoa and replace the orange essence with rum essence.
